Firepot Green Gumbo is a take on “Gumbo Z’Herbes,” a New Orleans classic cooked in a pot. According to legend, for every different vegetable you cook, you’ll find a new friend next year. So we’ve added seven, rotating through seasonal vegetables like nutritious kale, collard greens, spring greens, lettuce, spinach, parsley, and watercress. Served with rice, this is authentic, earthy vegan cuisine at its best.
